This coffee undergoes a champagne-style fermentation, a controlled process inspired by sparkling wine methods, where whole cherries are fermented in sealed, oxygen-limited environments to encourage slow fermentation and the development of fine, effervescent acidity. This technique enhances aromatic complexity while preserving clarity and structure in the cup.
