From Small Beginnings to a Coffee Roasting Platform That Supports Others

How It Started

Roast Lab began in 2013 in Epping, Melbourne. But the journey started long before that.

Before coffee, there was a career in media—as an account manager at The Age newspaper. But a passion for hospitality and people led to opening a café and running a small business. That hands-on experience gave a real understanding of what café owners face day-to-day—the early mornings, the pressure to deliver quality, and the challenge of keeping customers coming back.

Learning the Craft

What began as curiosity quickly became a commitment to learning the full coffee journey. That meant diving deep into:

  • Roasting: Understanding how to bring out flavour, balance, and character in every batch.

  • Blending: Crafting consistent, great-tasting blends that work on the bar and keep customers loyal.

  • Brewing: Exploring espresso, filter, and manual brew methods to get the best out of every bean.

  • Farming: Gaining real insight into the origin of it all by running a coffee farm—learning about cultivation, harvesting, and processing firsthand.

This complete view of the coffee chain shaped the heart of Roast Lab.
