El Árbol Farm is located in the Nueva Segovia region of Nicaragua at elevations between 1,100–1,300 MASL, where the cool climate and rich soils create ideal conditions for producing high-quality specialty coffee. This lot is produced by Claudia Lovo, a forward-thinking producer known for her focus on precision processing and innovation. At El Árbol, she combines careful cultivation with advanced fermentation techniques to enhance flavour clarity and consistency, helping showcase the full potential of Nicaraguan coffee on a global stage.
For this lot, ripe cherries are meticulously selected and undergo carbonic maceration in sealed fermentation tanks, a controlled process that intensifies fruit expression and structure in the cup. After fermentation, the coffee is dried slowly as a natural, allowing for even moisture reduction and the development of deeper sweetness and complexity.
The result is a refined and balanced cup, offering vibrant notes of cherry and pineapple layered over a smooth toffee body, finishing with a delicate hint of apricot. Clean, expressive, and polished, this coffee highlights the precision behind its processing and the unique character of its origin.
